I started with a sugar, potato and lemon juice mash. PAV was 13% and it PH'd at 4 and currently in the fermentation process. When I get ready to run I plan on taking the zest from fresh lemon and limes. The zest will of course go into my gin box along with the juniper berries. Can I take the actual lemon and lime and add it to my mash right before I distill?

The juniper berries that I have access to are dehydrated. Do I need to do anything with them before I put them in the gin box (re-hydrate, crush, leave whole)?

Any suggestions would be greatly appreciated.

Shiner, any of the things you mention are going to give you a good result, but whatever you do carefully make notes of it, so that you can duplicate your recipe if it turns out to be exceptional. Not only the ingredients, but how much heat you are using, if you are using reflux action etc. Bear in mind that you will get more flavor from the wash if you are using less reflux action. I think that your juniper berries will hydrate on their own in the gin box. I would only try crushing them if you aren't getting enough flavor from them.

Making gin is like making chilli...lots of different ways and recipes :D Let us know how it turns out...

On the subject of the Gin making.... I'm not there yet but someday, anywho, my question is Wheredaya get the junniper berries even the dehydrated kind? Paul

The brand is Brewcraft. They are based out of Portland OR.

Woorah the gin is done! Very successfull. Here is how I made my gin box. Copper pipe, rubber corks, stainless steel screen . . .

Holy Hoppin' Juniper Berries! That's a cool setup!

So how does your gin taste? Please describe (I'm salivating)...does it compare with anything out there storebought? What was your recipe, process etc?

Your gin box idea has given me one too. Suppose we use the column to include the gin box. I'm thinking that perhaps the top area could be where we put the flavorings. Put a piece of screen after the marbles, add the botanicals and away we go!

I'm going to try it. I have a lot of 2" copper left so I'm going to make a four footer...two feet will be reflux for the marbles, and after that another two feet for flavorings. I'll put juniper berries, lemon/lime and the rest will be as much cilantro as I can loosely pack in. Can't wait :)

I've got a sugar based batch on now that I'll use when it ferments out. Stay tuned!
